Pancit is traditionally a special dish handed down to us by the Chinese which we usually serve in special occasions. According to their beliefs, noodles should be eaten during birthday celebrations because they represent long life and good health.
My favorite noodle dish is pancit canton, a type of egg noodles prepared with several ingredients like sliced pork, shrimp and stir fried vegetables which makes it look and taste very festive.
My problem with pancit canton noodles that I usually buy in the market is that it tends to be so soggy when overcooked, or when I mistakenly put more water than the exact measurement.

In a wok or a pan, stir fry some bean sprouts, carrot strip and onion springs. Season with a dash of salt and set aside. In the same pan, add a tablespoon of cooking oil, then stir fry the cooked Good Life noodles for 3-5 minutes. Add 2-3 tablespoon of oyster sauce and a tablespoon of soy sauce. Adjust the taste according to your preference. When done, mix the stir fried bean sprouts. Top with pork or shrimp siomai. It’s best eaten with chopsticks!
